Two Pea Pasta with Ricotta

Many of us are doing Meatless Monday and coming up with something delicious can sometimes be a challenge.

Martha Stewart has a great Pasta recipe that’s quick…easy…and delicious!¬† ūüôā


  • 1 box¬†Gemelli or other short pasta
  • 12 oz. Sugar Snap Peas… stem ends removed
  • 1- 10 oz. package Frozen Peas
  • 2 tbsp. Butter
  • 2 tbsp. fresh Tarragon…¬†¬†chopped
  • 1 cup Ricotta Cheese…part skim
  • Kosher¬†Salt¬†& Black¬†Pepper


  • Cook Pasta in a large pot of salted boiling water about¬†3 Pasta is¬†less than al dente.
  • Add Snap Peas to pasta pot…¬†cook 2 minutes… add frozen¬†Peas… cook 1 minute more
  • Reserve¬† 1/2 cup Pasta Water… drain Pasta and Vegetables… return Pasta /¬†Peas¬†¬†to pot.
  • Toss Pasta and Peas¬†with Butter.. Tarragon..Ricotta.
  • Add a little of the¬†reserved pasta water to create a thin sauce that coats Pasta.
  • Season with Salt & Pepper to taste.
  • Serve & Enjoy!!!
