Savory Bean and Spinach Slow Cooker Soup

Nothing like a bowl of warm, delicious soup on a cold day! 🙂

Get out your Crock Pot 😉

Ingredients:

  • 3- 14 oz. Vegetable Broth
  • 1- 15 oz. Tomato Puree
  • 1- 15 oz. small White Beans..Cannelli..Kidney..Pinto
  • 1/2 cup uncooked Brown Rice
  • 1/2 cup Onion..finely chopped
  • 1 tsp. dried Basil
  • 2 cloves Garlic..  chopped
  • 1/4 tsp. @ Salt and Black Pepper
  • 8 cups fresh Spinach or Kale leaves..coarsely chopped
  • Parmesan cheese
  • Loaf of Crusty Bread 😉

Directions:

  • Combine Vegetable Broth.. Tomato Puree.. Beans.. Rice..Onion.. Basil.. Salt/Pepper and Garlic in Slow Cooker
  • Cover.. cook on LOW.. 5 to 7 hours or HIGH 2 1/2 to 3 1/2 hours.
  • Just before serving… stir in Spinach or Kale
  • Sprinkle with Parmesan Cheese…Enjoy!!!
