Sausage, Bean & Spinach Stew

Looking for a recipe that’s not Soup or Chili?

Here you go….get out your Crock Pot 🙂

Ingredients:

  • 1 lb. dried White Beans
  • 8 cups ( 64 oz. ) low sodium Chicken or Vegetable Broth
  • 1 Onion…finely chopped
  • 2 Carrots…finely chopped
  • 2 ribs Celery…finely chopped
  • 6 cloves Garlic…finely chopped
  • 8 sprigs Thyme
  • 1 lb. sweet or hot Italian Sausage…removed from casing…formed into 1/2 in “Meatballs”
  • 1 bunch Spinach…trimmed
  • Juice of 1/2 Lemon
  • 1 Bay Leaf
  • Parmesan Rind…optional..but yummy

Directions:

  • Combine Beans, Broth, Onion, Carrots, Celery, Garlic, Thyme, Bay Leaf, Parmesan Rind.
  • Cover..cook on HIGH 3-4 hours..until Beans are nearly tender.
  • Place Sausage Meatballs on top of Beans..cover and cook additional 25-30 minutes
  • Remove Thyme, Bay Leaf and Parmesan Rind.
  • Stir in Spinach and let stand until Spinach wilts…about 10 minutes.
  • Stir in Lemon juice…Salt & Pepper to taste
