Maple Vanilla Carrots

A hint of Vanilla and Maple Syrup turn these Carrots into a family friendly side dish.


  • 1 lb. Carrots… peeled..cut diagonally into 1/2-inch-thick slices
  • 2 cups Water
  • 1 Vanilla Bean…cut in half lengthwise
  • 2 tbsp. pure Maple Syrup
  • 1 tbsp. Unsalted Butter
  • 1/2 tsp. Kosher Salt
  • Pinch of ground Black Pepper


  • Combine Carrots and Water in a large skillet.
  • Scrap Vanilla Seeds into skillet…then add Vanilla Bean pod.
  • Bring to a simmer.. cook until Carrots are tender and most of the water has evaporated..about 1o-15 mins.
  • Stir in Maple Syrup..Butter.. Salt & Pepper…toss to coat.
