Lentil Soup with Beef

A warm bowl of savory soup helps chase away the chill of a snowy winter day 🙂

Ingredients:

  • 1 lb. boneless Sirloin Steak
  • 4 cups low sodium Beef Broth
  • 1 cup Water
  • 1 cup Lentils…rinsed…drained
  • 3/4 cup Sweet Red Pepper..chopped
  • 1/2 cup Onion…chopped
  • 1/2 cup Carrots…sliced
  • 1/2 cup Celery…sliced
  • 2 cloves Garlic…minced
  • 1 tsp. Cumin
  • 1/4 tsp. Cayenne Pepper
  • 1/3 cup fresh Parsley…chopped..optional

Directions:

  • Trim fat from meat and cut into pieces.
  • Brown meat in a skillet…use a slotted spoon to add meat to Crock Pot.
  • Add Onion..Celery..Garlic..Red Pepper to skillet…cook until Onions are just translucent…add to Crock Pot
  • Stir in Broth..Carrots…Spices…Water
  • Cover..cook on HIGH 3-4 hours or LOW 7-8 hours
  • Stir in Parsley just before serving.
