Gingerbread Pancakes

In my never ending search for all things Gingerbread…

I found this yummy┬áPancake recipe ­čÖé


  • 1 1/4 cups Flour
  • 1 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 tsp. Cinnamon
  • 3/4 tsp. ground Ginger
  • 1/8 tsp. ground Cloves
  • 1/4 cup┬á Dark Brown Sugar┬á…firmly packed
  • 2 Eggs
  • 2 tbsp. light Molasses
  • 4┬átbsp. Unsalted Butter… melted
  • 3/4 cup Water


  • Preheat an oven to 250┬░F. …to keep Pancakes warm ­čśë
  • Whisk together Flour.. Baking Powder.. Baking Soda.. Salt.. Cinnamon.. Ginger and Cloves in a large bowl.
  • In a separate bowl.. whisk together Brown Sugar.. Eggs..Molasses.. 2 tbsp. melted Butter and Water.
  • Add Brown Sugar Mixture to Flour Mixture… stir until just blended. It may be┬áslightly lumpy.
  • Pour┬áabout 1/4 cup batter onto hot Griddle for each Pancake.
  • Cook until small bubbles appear and edges start to look dry… about 4 minutes.
  • Carefully turn┬áPancakes over and cook until lightly browned on the other side.. about 1 minute more.
  • Place in oven to keep warm… don’t cover Pancakes or they will get soggy.┬á ­čÖü
  • Serve immediately with warm syrup….powdered sugar…whipped cream.
