Garlic Hasselback Potatoes

Potatoes are my weakness…I’m always looking for something new to do with a Potato ūüôā

These Garlic Hasselback Potatoes are amazing!!! YUM!!!


  • 1 lb.¬†new Red¬†Potatoes
  • 3 to 5¬†cloves Garlic …thinly sliced
  • 4 tbsp.¬†Unsalted Butter… melted
  • 2 tbsp. Olive Oil
  • Kosher Salt & ground Black Pepper
  • Herbed Sour Cream:
  • 1/2 cup Sour Cream
  • 1/2 tsp. Garlic Powder
  • 1 tbsp. fresh¬†Parsley leaves…finely chopped
  • Kosher Salt¬†& ground Black Pepper


  • Preheat oven to 400 degrees F.
  • Make several parallel slits into each Potato top making sure¬†NOT to slice completely through the Potato
  • Place 3 Garlic slices between slits at the crown of each Potato.
  • In a medium bowl…combine melted¬†Butter and Olive Oil.
  • Gently toss Garlic filled Potatoes in bowl with Butter / Olive Oil
  • Place Potatoes¬†on a parchment lined¬†baking sheet… sprinkle generously with Salt &¬†Pepper.
  • Bake until tops are crispy and potatoes are cooked through…about 1 hour.
  • While Potatoes cook…Combine all ingredients for Herbed Sour Cream¬†in a small bowl.
  • Season to taste…refrigerate until ready to¬†use.
  • Transfer¬†cooked Potatoes to a serving¬†platter and top with Herbed Sour Cream
