creamy tortellini soupThere’s nothing better than a warm bowl of Creamy Soup on a cold winter day 🙂

Cheese Tortellini & Baby Spinach add deliciousness to this yummy soup.

Ingredients:

  • 2 – cans condensed Cream of Mushroom or Chicken Soup
  • 4 cups ( 32 oz.) Vegetable or Chicken Broth
  • 1 cup Water
  • 4- 5 cups Fresh Spinach
  • 1 1/2 cups fresh Mushrooms…sliced
  • 1/2 cup Onion…chopped
  • 3-4 Garlic cloves..minced.
  • 1/4 tsp. Oregano
  • 1/2 tsp. Basil
  • 1/4 tsp.Salt
  • 1/8 tsp. Cayenne or Black Pepper
  • 1- 16 oz. fresh or frozen Cheese Tortellini
  • Parmesan Cheese for topping

Directions:

  • In Crock Pot..combine canned Soup…Broth..Water. Whisk until mixed well.
  • Quickly sautĂ© Mushrooms..Garlic and Onion…just until Onion is translucent…add to Crock Pot.
  • Add Oregano..Basil…Salt and Pepper..Spinach..stir to blend…
  • Cover..cook on LOW 5-6 hours or HIGH 2-3 hours.
  • Add Tortellini..Cover..cook an additional 30 mins for fresh or 45 mins for frozen…on HIGH
  • Sprinkle Parmesan to each bowl….Enjoy!!!

** You can add 2 cups of shredded Chicken to this recipe also **
