Chicken Sate with Spicy Peanut Dipping Sauce

These sound Exotic and intimidating…but they are so simple to make.

Amazingly delicious…your guests will love them! 🙂

Ingredients:

For Chicken:

  • 3/4 cup unsweetened Coconut Milk
  • 1 tbsp. Fish Sauce
  • 1 tbsp. packed Light Brown Sugar
  • 1 tbsp. Thai Red Curry Paste
  • 1 1/2 tsp. kosher Salt
  • 2 pounds boneless, skinless Chicken Breasts
  • 30 (8-inch) Wooden Skewers …soaked in water for 30 minutes to avoid burning
  • Vegetable oil

For Peanut Sauce:

  • 3/4 cup unsweetened Coconut Milk
  • 1/4 cup chunky all-natural Peanut Butter (no salt or sugar added)
  • 1 tbsp. Fish Sauce
  • 1 tbsp. packed Light Brown Sugar
  • 1 tbsp. Thai Red Curry Paste
  • 2 tsp. Chili-Garlic Paste
  • 1 tbsp. freshly squeezed Lime Juice

Directions:

  • Whisk together Coconut Milk, Fish Sauce, Brown Sugar, Curry Paste, Salt in a large bowl… set aside.
  • Cut Chicken lengthwise into 1/2-inch-thick pieces… add to marinade…stir to coat completely.
  • Cover bowl with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours.
  • To make Peanut sauce: Whisk together Coconut Milk, Peanut Butter, Fish Sauce, Brown Sugar, Curry Paste, Chili Garlic paste in a small pan
  • Bring to a simmer over medium heat.. stirring occasionally.. about 3 minutes
  • Remove pan from heat.. stir in Lime juice.. transfer sauce to a small bowl to cool.
  • Cook Chicken:  Thread a single piece of chicken lengthwise onto each skewer and place a baking sheet.
  • Heat Griddle pan on stove top or heat BBQ
  • Grease Griddle or BBQ grates with Vegetable Oil so Chicken doesn’t stick.
  • Cook Chicken Skewers 3 -4 minutes on each side.
  • Place on serving platter an serve with Peanut dipping sauce.
