Gingery Chicken and Pot Sticker Soup

This Soup is quick..easy…and delicious!! 🙂

I added a bag of frozen Stir Fry Veggies to give it a little more substance 😉

Ingredients:

  • 2- 32 oz. low sodium Chicken Broth
  • 1/8-1/4 tsp. Ginger….personal preference…optional.
  • 1- 16oz. package frozen Pot Stickers
  • 3 med Carrots…sliced thin
  • 1- 12oz.package frozen Stir Fry Veggies
  • 1 tbsp. Sesame Oil
  • 2 Scallions…sliced thin
  • 1 small Onion…finely chopped
  • 1 clove Garlic…minced
  • 8 oz. Shiitake Mushrooms… sliced
  • Salt & Pepper to taste.

Directions:

  • Heat Oil in sauce pot large enough to cook soup…add Onion & Garlic…cook until Onion is soft and translucent.
  • Add Broth…Scallions..Ginger…..Salt & Pepper..bring to a boil.
  • Reduce heat to simmer..add Pot Stickers…Stir Fry Veggies …Carrots.
  • Cook 10 – 15 minutes…until Pot Stickers rise to the top and Carrots are just tender.
  • Stir in Mushrooms and let cook about 5 minutes more.
  • Serve & Enjoy!! 🙂
