Falafel…Butternut Squash…. Let’s see….
Falafel.. It’s crispy on the outside, softer on the inside, and packs a punch of flavor.
Baked not Fried so the calories have been reduced 🙂 These are great served with salad and Tzatziki or stuffed into a Pita.
1/2 small onion, diced
1 15.5oz can chickpeas, drained and rinsed
1 1/2 cups cubed butternut squash (do yourself a favor and get it pre cubed!) *
3 cloves garlic, minced
2 tbsp tahini*
1/2 tsp cumin
2 tbsp dry parsley
1/4 tsp salt
1/8 tsp cayenne pepper (optional for a little kick)
