Egg Sandwich

Looking for a savory  breakfast / brunch  sandwich?

Here it is 🙂  Spicy Mayo…Arugula…delicious!! Cheese and Avocado can also be added to this recipe.


Maple Bacon and Spicy Mayo:

  • 12 slices thick-cut Bacon
  • 2 tbsp. pure Maple Syrup
  • 1/4 cup Mayonnaise
  • 1 tbsp.Sriracha


  • 8 slices White Bread
  • 1/4 cup Mayonnaise
  • 2 tbsp. Unsalted Butter
  • 4 large Eggs
  • Kosher Salt and Black Pepper to taste
  • 1 cup Arugula Leaves


  • Heat oven to 350 degrees
  • Place Bacon on foil lined rimmed baking sheet… brush both sides of Bacon with Maple Syrup.
  • Bake until Bacon begins to crisp but not crumbly… 20-25 minutes.
  • Mix Mayonnaise and Sriracha in a small bowl.. set aside.
  • Spread 1 side of bread slices with plain Mayonnaise
  • Cook bread…in a heated skillet… mayonnaise side down.. until brown and crisp.. about 3 minutes.
  • Wipe out skillet….Melt butter in same skillet…. crack Eggs into skillet.
  • Cook Eggs… occasionally basting with butter in skillet… until whites are set.. about 3 minutes. Season with salt and pepper.
  • Spread untoasted side of each bread slice with Spicy Mayo.
  • Put sandwiches together… Bread, Bacon, Eggs  and Arugula.
