Baby Potatoes with Tomato Corn Sauté

Looking for a new Potato dish?

Baby Potatoes mixed with flavorful veggies..topped with shaved Parmesan….delicious!!


  • 1 lb. Baby Potatoes…halved
  • 1 tbsp. Olive Oil
  • 1 cup fresh or frozen Corn..thawed if using frozen
  • 1 clove Garlic…thinly sliced
  • 1/4 tsp. Salt
  • 1/4 tsp. Crushed Red Pepper Flakes
  • 1 cup Grape Tomatoes…cut in half
  • 1/3 cup Cilantro…chopped
  • fresh Parmesan Cheese…shaved…1/4 cup


  • Boil Potatoes..10 mins until just tender…drain…put aside
  • Heat Oil in large skillet..
  • Add Corn..Garlic..Salt..Red Pepper..sauté about 2-3 minutes
  • Add Potatoes and Tomatoes to skillet…sauté a minute or 2
  • Transfer to serving bowl or platter…garnish with Cilantro & shaved Parmesan.
  • Serve immediately.
